    Sweet potato wedges with garlicky-mayo sauce

    Sweet potato wedges with garlicky-mayo sauce

    • Preparation time: 10 minutes
    • Cooking time: 45 minutes

    Serves: 4, as a side


    4 medium sweet potatoes, scrubbed and cut into wedges
    2 tbsp olive oil
    1 red pepper, thinly sliced
    1 onion, thinly sliced


    3 tbsp mayonnaise
    2 tbsp natural yogurt
    2 cloves garlic, finely chopped
    10-12 fresh basil leaves, finely chopped 


    1. Preheat the oven to 200°C, gas mark 6. Put the potatoes on a baking tray and drizzle over 1 tbsp oil. Season and toss the wedges to coat. Bake for 45 minutes. 

    2. Meanwhile put the pepper and onion on another baking tray with the remaining 1 tbsp oil, season and mix well. Bake alongside the potatoes for 20 minutes. In a small bowl combine the garlic sauce ingredients, season and chill.

    3. Combine the cooked sweet potatoes, peppers and onions in a serving bowl and serve with the garlic sauce. This is lovely alongside roast chicken or grilled fish.
