    Togarashi mackerel with pickled radishes & grains

    150g pack mixed radishes, finely sliced
    2 salad onions, finely sliced
    Juice of 1 lime
    1 tsp sunflower oil
    2 frozen mackerel fillets
    1-1½ tsp Cooks’ Ingredients Shichimi Togarashi
    250g pack Love Life Spelt, Quinoa, Red Rice & Wild Rice  


    1. Tip the radishes and salad onions into a bowl and pour over the lime juice. Add a pinch of salt, stir well and set aside.

    2. Meanwhile, warm the oil in a nonstick frying pan over medium heat. Add the mackerel, skin-side down. Sprinkle over the togarashi and cook for 10-12 minutes, turning occasionally, until just cooked through, the fish is opaque and flakes easily with a fork.

    3. Cook the grains according to the pack instructions and divide between two bowls. Top with the radishes and mackerel.
