Tomato chutney

Makes: 1 large jar
2 x 250g packs Waitrose 1 Mixed Baby Tomatoes, stems removed
250g red onions (about 2 small), thinly sliced
2 tsp black mustard seeds
75ml cider vinegar
150g demerara sugar
1. Place the tomatoes and onions in a medium saucepan. Add all the remaining ingredients, season and mix well.
2. Bring to the boil, then simmer for 30 to 40 minutes, stirring occasionally or until thickened. Pour into a large sterilised jar and leave to cool. Keep in the fridge for up to 1 month. Delicious as part of a ploughman’s lunch or in sandwiches.
