Makes: 16
500g block puff pastry
500g turkey thigh mince
250g unsmoked streaky bacon, chopped
1 red onion, finely chopped
70g sun-dried tomatoes, drained and chopped
2 garlic cloves, crushed
1 tbsp dried oregano
2½ tbsp plain flour, plus extra to dust
1 egg, beaten
1 tsp nigella seeds
1. Take the pastry out of the fridge and set aside for 10 minutes. In a large bowl, stir together the turkey mince, bacon, onion, sun-dried tomatoes, garlic, oregano and flour; season well.
2. On a floured surface, roll the pastry out to a roughly 36cm square and cut in half. Spread the mince mixture in a cylindrical shape along the centre of each strip of pastry. Brush one of the long edges of pastry with the beaten egg then fold over the other edge to meet it and tightly encase the mince mixture. Roll the pastry over so that the seam is sealed underneath. Using a sharp knife, cut each roll into 8 pieces. Put on a baking tray and chill for 20 minutes.
3. Preheat the oven to 200˚C, gas mark 6. Brush the rolls with more beaten egg and sprinkle over the nigella seeds. Bake for 40-45 minutes until golden and crisp. Serve warm or at room temperature with a sprinkling of sea salt and tomato chutney, if liked.
