Vegan mango and granola pots

Serves: 4
1 large mango, peeled, stoned and flesh roughly chopped (about 250g prepared weight)
1 lime, juice
1-2 tbsp maple syrup
About 200g Deliciously Ella Original Granola
About 400g dairy-free yogurt alternative
1. Put 3⁄4 of the chopped mango in a blender with the lime juice and 1 tbsp maple syrup. Whizz to a purée, then add more maple syrup to sweeten, if liked. Finely dice the remaining mango.
2. Take 4 small jars or glasses. Put a layer of granola in the base, spoon over some yogurt alternative and then some mango purée. Repeat with another layer of granola, yogurt alternative and purée.
3.Top with a final sprinkle of granola and the diced mango. Serve immediately.
Cook’s tip
There are some great dairy-free yogurt alternatives including soya- and oat-based options. In this recipe, coconut milk yogurt alternative works particularly well with the flavours of the mango and lime
