Veggie and sausage mash with spring onion gravy

Serves: 2
240g pack Quorn best of British sausages
Sunflower oil spray
450g pack Waitrose swede, carrot & potato mash
100ml Cooks’ Ingredients vegetable stock
2 salad onions, thinly sliced
1 tbsp essential Waitrose redcurrant jelly
1. Arrange the sausages on a grill pan, spray with oil and cook for 12 minutes, turning until golden brown and cooked through.
2. Meanwhile, heat the mash according to pack instructions.
3. In the meantime, place the stock, salad onions and redcurrant jelly in a small pan, over a gentle heat, and stir to make the gravy. Serve with the sausages and mash.
You can share the same evening meals even if your family choose not to diet with you. Scale up portions by simply adding an extra spoonful of vegetables or starchy foods to the plates of those with bigger appetites, especially active, growing teens.
