First mentioned in an 1887 book of cocktails, this is named after a now-forgotten Broadway musical.
Serves: 1
50ml dry sherry (we used fino)
30ml sweet red vermouth (such as Martini Rosso)
2 dashes Angostura bitters
ice, for chilling
strip of orange zest and/or an olive, to serve
1. Put the sherry, vermouth and bitters in a cocktail shaker or jug with plenty of ice and stir well to chill. Strain into a martini or coupe glass. Garnish with a strip of orange zest, twisting it over the glass so it sprays its aromatic oils over the surface, and an olive if liked.
Mix it up: For a longer drink, halve the quantity, and serve in a tall glass with ice, tonic and an orange wedge.
