    All-in-one Cauliflower Supper

    Here is an updated version of a popular dish that everyone is sure to enjoy. It is very quick and convenient as it uses a ready-made fresh cheese sauce. Just add your choice of sausage or salami from the Deli Counter.

    • 1 large English cauliflower - about 900g
    • 100g piece salami-style sausage, such as Spanish chorizo or organic Milano salami (from the Deli Counter)
    • 1 bunch salad onions, finely chopped and washed
    • 3 tbsp mayonnaise
    • 25g Waitrose Parmigiano Reggiano, grated
    • 350g tub Waitrose Fresh Cheese Sauce


    1. Cut the cauliflower into large florets leaving most of the inner leaves on. Cook in a large pan of boiling water for 7-10 minutes, or until just tender. Drain well.
    2. Meanwhile, peel and discard the skin from the sausage and roughly chop. Place in a frying pan and stir over a high heat until the fat begins to run and the sausage starts to turn crispy at the edges. Add the salad onions and stir over the heat for a further 1 minute. Remove from the heat and stir in the cauliflower to coat in the juices, then transfer into a shallow ovenproof dish.
    3. Preheat the grill to high. Heat the cheese sauce according to the instructions on the pack, then stir in the mayonnaise and half the Parmigiano Reggiano. Spoon the sauce over the cauliflower.
    4. Sprinkle the remaining Parmigiano Reggiano over the top and brown under the hot grill for 3-4 minutes before serving.

    Cook's tips

    The whole dish can be made ahead, then covered and chilled in the fridge overnight. Reheat in a hot oven at 200°C, gas mark 6 for 25 minutes until piping hot and golden brown.
