Apple fritters with cinnamon sugar

Serves: 4-6
3 royal gala apples, peeled and cut into 1.5cm pieces
50g caster sugar
1 tsp ground cinnamon
About 1.5 litres sunflower oil, for deep frying
BATTER
100g self-raising flour
20g caster sugar
1 tsp vanilla extract
1 orange (scrubbed), zest
1 large egg, lightly beaten
60ml whole milk
1. In a large bowl, mix together all the batter ingredients with a pinch of salt, then fold in the apples. In a shallow, wide bowl or tray, combine the sugar and cinnamon; set aside. Pour sunflower oil into a deep pan until it’s a bit under halfway full, then heat until the oil reaches about 170ºC on a sugar thermometer or a piece of bread sizzles in 15 seconds.
2. Use two spoons to scoop up 3-4 pieces of apple lightly coated in batter and carefully lower into the hot oil (don’t add too much batter with the apples or the fritters will be soggy). Cook for 2-3 minutes until deep golden, turning over with a slotted spoon halfway through. Take out and drain with the slotted spoon; blot on kitchen paper to absorb the excess oil.
3. Repeat with the remaining apple mixture, keeping the oil temperature at 170°C. While the fritters are still warm, roll them in the cinnamon sugar. Serve straightaway on their own or with some vanilla ice cream and caramel sauce, if liked.
