    Bagels with warm smoked mackerel and bean salad

    1 tbsp essential Waitrose Olive Oil
    100g essential Waitrose Cherry Tomatoes, halved
    2 Waitrose Boneless Smoked Mackerel Fillets, skinned
    400g can essential Waitrose Mixed Bean Salad, drained and rinsed
    2 tbsp Waitrose Perfectly Balanced Vinaigrette Dressing
    Handful Waitrose Wild Rocket
    2 essential Waitrose Plain Bagels, halved and toasted


    1. Heat the oil in a frying pan and fry the tomatoes for 1 minute.

    2. Remove any bones from the mackerel and break into large flakes. Add to the pan with the beans and cook for 1 minute, then stir in the dressing and rocket. Spoon on top of the toasted bagels and serve with a wedge of lemon.
