Bloody Mary burgers with horseradish dressing

Serves: 4
500g organic beef mince
1 shallot, finely chopped
1 tsp Cayenne pepper
1 tsp celery salt
1 tbsp Worcestershire sauce Few drops Tabasco sauce
25g breadcrumbs
1 medium essential Waitrose Free Range Egg
For the dressing
1 tbsp creamed or hot horseradish sauce
Juice ½ lemon
2 tbsp half fat creme fraiche
1 tbsp half fat mayonnaise
To serve
4 essential Waitrose White Sesame Seed Burger Buns
2 vine tomatoes, sliced
1. Place the beef mince in a large bowl and add the shallot, Cayenne pepper, celery salt, Worcestershire sauce, Tabasco, breadcrumbs and egg. Season with a pinch of salt and a black pepper and mix together well. Using wet hands, shape the mixture into 4 burgers and set aside in the fridge to chill for a few minutes while you make the dressing.
2. Place the horseradish, lemon juice, creme fraiche and mayonnaise in a bowl and mix together.
3. Heat the olive oil in a non-stick frying pan and cook the burgers for 5–6 minutes each side until thoroughly cooked and the juices run clear.
4. Heat the grill and toast the burger buns. Spread a tablespoon of the horseradish dressing on the base of each bun then top with a burger, slices of tomato and red onion. Serve with French fries.
