    Camomile gin sour

    Camomile gin sour


    1 Camomile tea bag
    3 tbsp boiling water
    2 1/2 tsp honey
    2 tbsp gin
    2 tsp lemon juice
    1 egg white
    1 Lemon (for garnish)


    Steep the camomile tea bag in 3 tbsp of boiling water for 2 minutes. Muddle to release its fragrance then discard.
    In an ice-filled shaker, vigorously shake the tea with the honey, gin, lemon juice and 1 egg white. Strain into a coupe and garnish with a lemon twist and sprig of rosemary.
