Cannellini & Manchego burgers with serrano ham & chilli sauce

Serves: 2
400g can cannellini beans
½ small red onion, finely chopped
35g Manchego cheese, grated
1 tsp Bart Mediterranean Herbs
3 tbsp chopped flat leaf parsley
2 tbsp Cooks’ Ingredients Sweet Chilli Sauce
2 tsp lemon juice
1 tbsp olive oil
3 slices serrano ham, halved
50g watercress, large stalks removed
1. Thoroughly drain the beans and press dry between several sheets of kitchen paper. Tip into a large bowl and mash with a fork to break them up (they needn’t be completely mashed). Add the onion, cheese, Mediterranean herbs, parsley and a little seasoning. Mix well until coming together, then shape into two burgers.
2. Combine the chilli sauce and lemon juice in a small bowl. Heat the oil in a frying pan and fry the burgers for 3 minutes on each side until golden. Scrunch up the ham slices and add to the pan for 1 minute more.
3. Serve the burgers with the watercress, crispy ham and a drizzling of the chilli sauce.
