Cauliflower couscous with chicken

Serves: 2
2 Chicken Breast Fillets
Zest and juice of 1 lemon
2 tbsp clear honey
2 cloves garlic, chopped
200g cherry tomatoes, still on the vine
220g pack Waitrose Cauliflower & Broccoli Couscous
Fresh thyme leaves to garnish
1. Preheat the oven to 200°C, gas mark 6. Place the chicken in a small roasting tin. Mix together the lemon zest and juice, honey and garlic, and pour over the chicken. Roast for 15 minutes.
2. Add the tomatoes and cook for a further 10 minutes until they are soft, the chicken is cooked through and there is no pink meat.
3. Microwave the couscous according to pack instructions and serve with the chicken. Garnish with the thyme.
