Cauliflower with sweet & sour onions

Serves: 2
1 tbsp olive oil
3 medium onions, thinly sliced
1 tsp Cooks' Ingredients Sundried Tomato Paste
1 tbsp caster sugar
2 tbsp red wine vinegar
1 tbsp chopped fresh thyme
1 large cauliflower, trimmed and broken into small florets
50g pine nuts, toasted
50g raisins
chopped flat-leaf parsley, to garnish
1. Heat the oil in a frying pan, add the onions and cook over a very gentle heat for 12 - 15 minutes, stirring regularly, until really soft and golden.
2. Stir the tomato paste, sugar, vinegar and thyme into the onions and cook for a minute longer. Add the cauliflower florets with 200ml cold water and seasoning. Cover and simmer for 4 - 5 minutes until the cauliflower is just tender.
3. Add the pine nuts and raisins. Heat through and scatter with parsley before serving.
