Celery and sesame salad

Serves: 2-3
4 long, pale inner celery stalks
1½ tbsp light soya sauce
1 tbsp mirin
1 tbsp rice wine vinegar
½ tbsp toasted sesame oil
5cm fresh root ginger, sliced into very fine matchsticks
1 tbsp sesame seeds, lightly toasted
1. Slice the celery wafer-thin diagonally (use a mandoline if you have one). Combine the soya sauce, mirin, rice wine vinegar and sesame oil to make a dressing. Put the celery and ginger on a plate or in a shallow bowl, spoon over the dressing and scatter with the sesame seeds before serving.
