    Chick pea vegetarian burgers

    For the best veggie burger ever, follow this quick everyday recipe

    Serves: 4


    • ½ tbsp olive oil
    • 2 x 400g cans essential Waitrose chick peas, drained and rinsed
    • 2 tsp ground coriander
    • 3 tbsp essential Waitrose tomato purée
    • 1 large egg
    • 1 garlic clove, crushed
    • 2 tbsp chopped chives
    • 4 essential Waitrose white crusty rolls, toasted
    • 4 leaves essential Waitrose round lettuce
    • 2 essential Waitrose tomatoes, sliced
    • 4 tbsp essential Waitrose half fat mayonnaise


    1. Preheat the oven to 220C, gas mark 7. Line a baking tray with greaseproof paper and brush lightly with the oil. In a food processor, whizz the chick peas, coriander, tomato purée, egg and garlic until combined, but leaving the chick peas with some texture. Stir through the chopped chives and season.
    2. Shape into 4 burgers and place on the baking tray. Cook in the oven for 18–20 minutes, turning halfway through, until lightly golden.
    3. Serve the burgers in toasted rolls with some lettuce, tomato slices and a dollop of mayonnaise.
