    Chicken cacciatore

    1 tbsp oil
    6 essential Waitrose British Chicken Breast Fillets (approx 1kg)
    2 red onions, sliced
    1 yellow pepper, deseeded and sliced
    75g essential Waitrose Pitted Black Olives
    2 x 350g tubs essential Waitrose Tomato And Chilli Sauce


    1. Preheat the oven to 200°C, gas mark 6.

    2. Heat the oil in a large frying pan and fry the chicken for 5 minutes to brown on both sides, transfer to an ovenproof serving dish.

    3. Add the onions and pepper to the pan and fry for 5 minutes, then stir in the olives and tomato sauce. Cook gently for 1 minute. Pour over the chicken and bake for 30 minutes until the chicken is cooked throughout with no pink meat.
