Chicken & puy lentil salad

2 essential Waitrose BritishChicken Breasts
1 tbsp extra virgin olive oil, extra to drizzle
150g essential Waitrose Cherry Tomatoes
1 tbsp essential Waitrose Balsamic Vinegar
250g pouch Love Life Puy Lentils
70g bag wild rocket
1. Preheat the oven to 200ºC, gas mark 6. Place the chicken in a small roasting tin and drizzle with a little oil, season. Bake for 15 minutes. Add the tomatoes and cook for a further 15 minutes until the chicken is cooked through with no pink meat.
2. Meanwhile, whisk together the oil and vinegar. Heat the lentils according to pack instructions and stir in the dressing along with the rocket and the tomatoes. Serve topped with the sliced chicken breasts.
