Makes: 16 small rolls
75g Arden & Amici Almond Cantuccini
2 x 220g frozen Northern Dough Co Original Pizza Dough, defrosted
100g no added sugar chocolate spread (such as Jim Jam’s)
3 tbsp honey or maple syrup
350g mixed berries (strawberries, blueberries and raspberries)
Vanilla ice cream, to serve
1. Preheat the oven to 220ºC, gas mark 7. Place the biscuits in a food processor and blitz to make crumbs. Alternatively, place in a freezer bag and seal, then crush with a rolling pin.
2. Roll out each of the pizza dough balls to a rectangle measuring 30x22cm. Top each with the chocolate spread then sprinkle over 2/3 of the crumbs between each rectangle. Roll each one up, starting from the longest side, to create a pinwheel. With the seal-side down, cut each rectangle into 8 rounds.
3. Place, cut-side up, in a shallow baking tin about 22cm in size, making sure there is enough space between them. Bake for 10-12 minutes until puffed
up and golden.
4. While the rolls are still warm, brush them liberally with the honey or maple syrup, then sprinkle with the remaining cantuccini crumbs. Serve while still hot with the mixed berries and ice cream.
