225g unsalted butter
350g Waitrose Continental Plain Chocolate
1 x ½ 400g pack Waitrose LOVE Life Walnuts
4 large eggs
350g light brown muscovado sugar
Grated zest of 2 large oranges
225g plain flour, sifted
1. Preheat the oven to 180°C, gas mark 4. Grease a 23x32cm deep-sided baking tray and line with baking parchment.
2. In a small saucepan, slowly melt the butter and chocolate, stirring regularly. When the lumps of chocolate are small, turn off the heat to reduce the risk of overheating — it will be hot enough to finish melting. Cool.
3. Roughly chop the walnuts and set aside. In a large bowl, whisk together the eggs, sugar and orange zest for 10 minutes or until pale and fluffy.
4. Stir the chocolate mixture into the egg mixture then fold in the flour and walnuts. Pour into the tray and bake for 25-30 minutes. Test with a skewer — the mixture should seem not quite cooked in the middle. Cool, then cut into 16 squares. Dust the top with icing sugar, if you wish.
