    Chunky cashew nut butter

    Ingredients

    300g Waitrose LOVE Life cashew nuts

    Pinch of sea salt

    Pinch of cayenne pepper

    Method

    1. Scatter 300g Waitrose LOVE Life cashew nuts onto a non-stick baking sheet and roast at 180°C, gas mark 4 for 7-8 minutes until dark golden.
    2. Leave to cool for 
a few minutes, then tip the nuts into a small food processor. Whizz until finely chopped.
    3. 
Lift out a quarter of the nuts, then blend the remainder for
 5 minutes to form a thick and creamy paste. Stir in the chopped nuts with a pinch of sea salt or cayenne. Scrape into a small airtight jar and store in the fridge for up to a week.
