Cinnamon, berry & granola soda bread

Makes: 1 loaf (10 slices)
450g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
2 tsp ground cinnamon
½ tsp sea salt flakes
150g Nature’s Path Organic Gluten Free Granola With Blueberries, Raspberries, Strawberries & Yogurt Chunks
2 tbsp clear honey
Approx 400ml buttermilk
Icing sugar for dusting (optional)
1. Preheat the oven to 200°C, gas mark 6. Place a baking tray in the oven to preheat. Mix together the flour, bicarbonate of soda, cinnamon and salt in a large bowl. Place the granola in a food bag and bash with a rolling pin to break down the larger chunks. Stir the granola into the flour mixture.
2. Stir in the honey and enough buttermilk to form a rough dough. Knead lightly on a floured surface and roll into a ball. Cut a deep cross in the centre and place on the preheated baking tray.
3. Bake for 30-35 minutes or until golden and the base sounds hollow when tapped. Dust with a little icing sugar to serve, if using.
