Try this beautiful citrus prawn salad - brilliant for sunny days with friends or the perfect pick-me-up whatever the weather.
½ tbsp olive oil
1 essential Waitrose Yellow Pepper, diced
150g essential Waitrose Cherry Tomatoes, halved
1 essential Waitrose Orange or 2 Waitrose Foundation Satsumas, segmented
200g frozen essential Waitrose Cooked King Prawns, defrosted
1 tbsp juice and zest of ½ essential Waitrose Lemon
1 tbsp lemon juice
1 tbsp essential Waitrose Half Fat Mayonnaise
50g pack Waitrose Wild Rocket
1. Heat the oil in a frying pan and fry the pepper for 1–2 minutes. Transfer to a serving bowl and add the tomatoes, orange segments and prawns.
2. Whisk the lemon zest and juice with the mayonnaise and toss into the salad with the wild rocket.
