This twist on classic French toast comes from Caravan’s head chef, Miles Kirby, combining salty and sweet flavours for maximum impact.

2 eggs
100ml double cream
20g unsalted butter
8 rashers smoked streaky bacon • 2 avocados, diced
50g rocket
1 lemon, juice
2 tbsp olive oil
CORNBREAD
400ml whole milk
3eggs
60g unsalted butter, melted • 200g sweetcorn
4 salad onions, chopped
1 tbsp baking powder
1 tbsp caster sugar •2tspsalt
160g polenta
65g strong white bread flour
MAPLE PAPRIKA DRESSING
1⁄2 tbsp smoked paprika
110ml maple syrup
