Crispy puy lentil, peach & Parma ham salad

We’ve fried the lentils with garlic to add crispy texture to this Mediterranean salad. If you've never tried it before, we urge you to have a go.
Serves: 2
2½ tbsp olive oil
1 garlic clove, sliced
250g pack Ready To Eat Merchant Gourmet Puy Lentils
1 peach
½ x 83g pack Italian Parma ham
¼ x 25g pack basil, leaves picked
1 tbsp balsamic vinegar
10g shaved parmigiano reggiano
1. Heat 2 tbsp oil and the garlic in a large frying pan over a medium-high heat. Add the lentils and fry for about 8 minutes, stirring regularly until the lentils are crisp in places. Set aside to cool for 5 minutes.
2. Halve and finely slice the peach; toss with the lentils, along with any peach juice from the chopping board. Divide between 2 plates along with the Parma ham and basil leaves. Drizzle over the remaining ½ tbsp oil and the balsamic vinegar; scatter with the cheese and grind over some black pepper to serve.
Cook’s tip
Swap the parmigiano reggiano for torn mozzarella or slices of goats’ cheese, if you prefer.
