    Date, lemon and coriander relish

    Serves: 4


    100g (about 6) medjool dates, stoned and chopped
    1 tsp very finely chopped fresh root ginger
    1 lemon, zest and juice
    3 tbsp extra virgin olive oil
    1 green chilli, deseeded and finely chopped
    handful fresh coriander leaves, chopped


    1. Combine all the ingredients in a medium bowl and season. Serve with griddled halloumi, pork or chicken, baked feta or roast fish. The relish will keep, chilled and covered, for 3 days.
