Date & macadamia loaf

Serves: 8
100ml whole milk
100g honey
50g unsalted butter
250g self-raising flour
175g caster sugar
Finely grated zest of 1 orange
½ tsp ground cinnamon
180g medjool dates, stoned and roughly chopped
75g macadamia nuts
2 British Blacktail Medium Free Range Eggs, lightly beaten
2 tbsp demerara sugar
1. Preheat the oven to 180°C, gas mark 4. Grease and line a 900g loaf tin with parchment paper. Place the milk, honey and butter in a saucepan, and heat gently until the butter has melted.
2. Place the flour, sugar, orange zest, cinnamon, dates and nuts in a large bowl, and mix together well. Pour in the milk and honey mixture, and combine. Stir in the eggs.
3. Spoon the mixture into the prepared tin and sprinkle over the demerara sugar. Bake for 40-50 minutes until firm to the touch and a skewer inserted into the centre comes out clean.
4. Remove from the tin and leave to cool completely on a wire rack. Delicious served just as it is, or spread with a little salted butter.
