Date & walnut banana loaf

Makes: 12 slices
40g butter, softened
2 tbsp Beloved Date Nectar
1 medium Waitrose British Blacktail Free Range Egg, beaten
100ml semi-skimmed milk
150g wholemeal or spelt flour
2 tsp baking powder
2 tsp mixed spice
2 ripe bananas, roughly mashed
40g walnuts, chopped
40g pitted dates, chopped
1. Preheat oven to 180°C, gas mark 4. Line a 500g loaf tin.
2. Cream the butter and date nectar in a large bowl, then add the egg and milk, and combine with a hand mixer. Sift in the flour, baking powder and mixed spice, stirring to incorporate. Add the bananas, walnuts and dates, and stir again.
3. Spoon the mix into the loaf tin and bake for 45 minutes. Allow to cool slightly, then slice and serve. (Best eaten on day of baking.)
