    Green bean salad with almonds, dill & feta

    Serves: 4 as a side salad

    Ingredients

    200g green beans, topped but not tailed
    1 tbsp apple cider vinegar
    2 tbsp extra virgin olive oil
    1 tsp Dijon mustard
    1 tsp clear honey
    1 little gem or sweet cos lettuce, cut into ribbons
    50g feta, crumbled
    ΒΌ x 20g pack dill, leaves only
    15g almonds, dry toasted 

    Method

    1. Bring a pan of water to the boil and add the beans. Cook for 4 minutes, then drain. Cool under cold running water for 10 seconds. Drain, dry and put in a serving bowl.

    2. Add the vinegar, olive oil, mustard and honey to a small jar and season. Shake well to combine and tip over the beans. Mix well.

    3. Add the lettuce ribbons and toss well. Garnish with the feta, dill and toasted almonds. Serve immediately.
