Griddled green bean & farro salad

Serves: 2
50g Love Life Quick Cook Farro Dicocco (or Italian spelt)
1 tbsp lemon juice
1 tbsp olive oil
200g pack trimmed fine green beans
1 tbsp shredded mint leaves
50g soft goat’s cheese or feta, crumbled
2 tbsp dried cranberries
2 tbsp toasted flaked almonds
1. Bring a saucepan of water to the boil and add the farro (or Italian spelt). Simmer for 10 minutes, then drain and toss with the lemon juice and ½ tbsp oil. Set aside.
2. Meanwhile, heat a griddle pan over a high heat. Toss the remaining ½ tbsp oil with the beans, then griddle them for 3-5 minutes until blistered and charred.
3. Toss the beans with the farro (or spelt), mint, cheese and cranberries, then divide between 2 plates, top with the almonds and serve.
