Grilled mackerel with pineapple salsa

4 mackerel fillets
½ pineapple, peeled, cored and finely chopped
1 red onion, finely chopped
1 red pepper, finely chopped
1 red chilli, deseeded and finely chopped
2 limes, juice, plus extra wedges to serve
½ x 25g pack coriander, roughly chopped
1 Preheat the grill to high. Score the mackerel fillets a few times diagonally on the skin side and season all over. Put the fillets on a grill tray, flesh-side down; grill for 4-6 minutes, until the skin is crisp and slightly charred and the fish is cooked through and opaque.
2 Meanwhile, put the remaining ingredients in a bowl and mix well; season. Serve the fish piping hot with the fresh salsa and extra lime wedges to squeeze over.
