Gruyère, fig and thyme toasties

Makes: 4
salted butter, softened, for spreading
8 slices sourdough bread or bloomer
180g gruyère cheese, grated
2 sprigs thyme, leaves picked
4 figs, sliced
2 tbsp wholegrain mustard
1. Lightly butter both sides of the bread, then top 4 slices with the grated cheese. Scatter over the thyme and lay the sliced figs on top, overlapping if need be. Spread the mustard over the remaining slices of bread, then position on top, mustard-side down, to create a sandwich. Press together to compact the cheese.
2. Heat a large, heavy-based frying pan over a medium-low heat. Place as many sandwiches as possible in the pan, cover with baking parchment and use another heavy pan to weigh them down. Fry for 4-5 minutes each side, until crispy and golden and the cheese has melted. (Repeat with the remaining sandwiches, if need be.) Cut the sandwiches in half and serve immediately.
