2 Waitrose Duchy Organic Medium Eggs
1 Waitrose Duchy Organic Wholemeal Muffin With Seeds And Oats
1 slice Waitrose Duchy Organic Roasted Ham With Scottish Heather Honey
50g Waitrose Duchy
Cornish Brie, sliced
Chopped parsley, to garnish
1. Poach the eggs in boiling water for 3-4 minutes according to taste.
2. Meanwhile, halve and toast the muffin. Cut the ham in half and put one piece on each muffin half. Place an egg on top of each, followed by the Brie, and place under a preheated grill for 2 minutes until the cheese is just beginning to melt.
3. Sprinkle with parsley and black pepper, and serve.
