Harissa turkey burgers & coleslaw

Serves: 4
1 small essential Waitrose Sweet Potato, about 175g, scrubbed
300g pack essential Waitrose Turkey Breast Mince
1 tbsp harissa paste
1 small red onion, finely chopped
300g white cabbage, finely shredded
75g dried pitted dates, chopped
40g walnut pieces
75g mayonnaise
150g essential Waitrose Fat Free Greek Style Natural Yogurt
2 tsp olive oil
1. Coarsely grate the sweet potato and put half in a bowl with the turkey mince, harissa paste and half the onion. Mix well until evenly combined. Quarter the mixture and shape into 4 evenly sized burgers.
2. Put the remaining sweet potato in a clean bowl. Add the cabbage, dates, walnuts and the remaining onion. Mix well. Combine the mayonnaise with the yogurt and add to the bowl. Mix well and season.
3. Heat the oil in a frying pan and gently fry the burgers for about 5 minutes on each side until deep golden and cooked through (with no pink meat and any juices run clear). Transfer to serving plates with the coleslaw. Delicious with a watercress or rocket salad.
