Hot smoked mackerel crumble

1 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Red Pepper, diced
195g can essential Waitrose Sweetcorn drained
400g can essential Waitrose Cannellini Beans, drained
227g can essential Waitrose Chopped Tomatoes
Pack (approx. 275g) of essential Waitrose Hot Smoked Mackerel Fillets, skinned, broken into pieces
75g essential Waitrose Butter, diced
150g essential Waitrose Plain Flour
50g essential Waitrose Medium Cheddar, grated
1. Preheat the oven to 200ºC, gas mark 6.
2. Heat the oil in a large frying pan and fry the pepper for 3 minutes. Add the sweetcorn, cannellini beans and chopped tomatoes, then cook for 2 minutes. Stir in the mackerel and transfer to an ovenproof serving dish.
3. Meanwhile, rub the butter and flour together to resemble breadcrumbs, stir in the cheese and season.Sprinkle over the mackerel and bake for 20 minutes.
