Italian 5-grain chicken

1 tbsp oil
½ x 1kg pack essential Waitrose British Chicken Thigh Fillets
1 leek, thickly sliced
100g Waitrose Love Life Quick Cook Italian 5 Grains
350ml chicken stock
1 bunch salad onions, cut into 3cm pieces
25g fresh parsley, chopped
1. Heat the oil in a large frying pan and fry the chicken for 4-5 minutes. Add the leek and grains and fry for 2-3 minutes. Stir in the stock and passata, cover and simmer for 20 minutes, stirring occasionally until the chicken is cooked through with no pink meat.
2. Add the salad onions and cook for a further 3 minutes. Sprinkle with parsley, season and serve.
