    Jordan Bourke's Pineapple, sweetcorn and chilli salsa

    Serves: 4-6 as a side


    300g pineapple flesh, finely diced
    1 shallot, finely chopped
    70g canned sweetcorn, drained
    2 red chillies, deseeded and finely chopped
    ½ x 28g pack fresh coriander, roughly chopped 
    1 tbsp lime juice


    1. Put the pineapple, shallot, sweetcorn, chillies and coriander in a bowl with the lime juice, season and mix together. Keep chilled until ready to serve.
