    Lentil & vegetable couscous

    150g essential Waitrose Couscous
    2 tsp olive oil
    250g frozen essential Waitrose Grilled Vegetable Mix
    400g can essential Waitrose Lentils, drained
    ½ x 25g pack parsley, chopped



    1. Place the couscous in a bowl and pour over 225ml boiling water, cover with clingfilm and leave for 5 minutes. Fluff with a fork.

    2. Heat the oil in a pan and fry the vegetables for 3-4 minutes, add the lentils and cook for 2 minutes.

    3. Stir in the couscous, season and sprinkle with chopped parsley.
