Mackerel and tomato couscous

250g essential Waitrose Couscous
350ml vegetable stock
340g jar essential Waitrose Tomato and Basil Pasta Sauce
195g can essential Waitrose Sweetcorn
300g can essential Waitrose Red Kidney Beans, drained and rinsed
2 x 125g cans essential Waitrose Mackerel in Olive Oil, drained
1. Place the couscous in a bowl and pour over the boiling stock, cover and leave for 5 minutes.
2. Heat the pasta sauce in a saucepan with the sweetcorn, kidney beans, and mackerel. Heat through for 1-2 minutes.
3. Fluff up the couscous with a fork and serve with the mackerel.
