Mackerel & tomato moussaka

1 tbsp vegetable oil
1 essential Waitrose Onion, chopped
400g can essential Waitrose Chopped Tomatoes
2 x 125g cans essential Waitrose Mackerel in Tomato Sauce
4 essential Waitrose Tomatoes, sliced
1 essential Waitrose Aubergine, sliced
2 Waitrose Free Range Eggs, beaten
250g essential Waitrose Greek Style Natural Yogurt
50g essential Waitrose Mild and Creamy Cheddar Cheese, grated
1. Preheat the oven to 200°C, gas mark 6. Heat the oil in a large frying pan and fry the onion for 3–4 minutes. Add the chopped tomatoes and cook for 5 minutes. Add the mackerel and sauce and break up into small chunks.
2. Place half the sliced tomatoes in the base of an ovenproof dish and spoon over the mackerel mixture. Top with the remaining sliced tomatoes. Place the aubergine slices in a single layer on top.
3. Mix together the eggs, yogurt and 50ml water, season well and spoon over the aubergines. Sprinkle with cheese and bake for 30 minutes until golden.
