Paprika Lemonade

A very adult non-alcoholic drink. The smoky paprika offsets the sweetness.
Serves: 10
500ml lemon juice, plus extra lemon slices, to serve
sparkling water, to top up
SMOKED PAPRIKA SYRUP
½ heaped tsp sweet smoked paprika
500ml caster sugar
1. For the syrup, stir the paprika into 250ml water and leave to infuse for 15 minutes. Put the sugar in a saucepan and strain in the paprika water through a coffee filter set in a sieve. Heat gently for 3-4 minutes, stirring, until the sugar has dissolved. Strain again though a fine sieve and cool before pouring into a new, sterilised bottle. Store in the fridge for up to 5 days.
2. For each serving, pour 25ml syrup and 50ml lemon juice into a highball glass filled with ice cubes. Stir to combine, add 1 more ice cube and top with sparkling water; stir again. Garnish with slices of lemon to serve.
