    Passion fruit and mint spritzer

    Passion fruit and mint spritzer

    • Preparation time: 10 minutes, plus cooling
    • Cooking time: 5 minutes
    • Total time: 15 minutes, plus cooling

    Serves: 6

    Ingredients

    160g golden caster sugar
    25g pack mint, leaves picked
    6 passion fruit
    1 lime, zest
    sparkling water, to serve 

    Method

    1. Put 300ml water in a pan with the sugar and ½ the mint leaves. Bring to the boil, then reduce the temperature and simmer for 3 minutes, stirring now and again. Remove from the heat. Halve the passion fruit, then scrape the pulp, seeds and juice into the pan. Leave to cool completely.

    2. Once cool, strain through a sieve, pressing out as much liquid from the passion fruit seeds and mint leaves as possible. Discard the mint leaves, but return ½ the passion fruit seeds to the syrup along with the lime zest. Stir to combine, cover and chill.

    3. To serve, divide the passion fruit syrup and remaining mint leaves between 6 tumblers and top up with ice and sparkling water. Serve immediately. (This is also delicious topped with sparkling wine as a cocktail.)
