    Saffron Tagliatelle with Fruits de Mer

    This speedy seafood pasta dish is made with a ready-prepared frozen medley of scallops, prawns, squid and mussels.

    Ingredients

    • 1 tbsp unsalted butter
    • 400g pack frozen Waitrose Fruits de Mer, ready-to-cook
    • 100ml Noilly Prat Vermouth
    • 250g pack fresh Waitrose Saffron Tagliatelle
    • ¾ x 200ml tub Waitrose Half Fat crème fraîche
    • ½ x 15g pack fresh dill, chopped

    Method

    1. Melt the butter in a frying pan until foaming. Add the fruits de mer and cook for 4-5 minutes over a medium to high heat, stirring occasionally. Pour in the vermouth and cook for 3-4 minutes until the liquid has reduced by half and the prawns have turned pink.
    2. Meanwhile, cook the tagliatelle according to pack instructions, then drain and return to the pan.
    3. Stir the crème fraîche and the dill into the seafood, heat through for 2 minutes then stir into the pasta. Season to taste and serve immediately.

    Variation

    Substitute 400g frozen ready-to-cook Waitrose Wild Canadian Roeless Scallops for the fruits de mer, adding a little chopped fresh red chilli.
