    Spinach Salad with Balsamic and Honey Dressing

    Ingredients

    • 145g bag Waitrose Watercress, Rocket and Spinach Salad
    • 225g bag baby spinach
    • 8 tbsp extra virgin olive oil
    • 2 tbsp balsamic vinegar
    • 1 tbsp clear honey
    • Toasted pine nuts

    Method

    1. Place a 135g bag Waitrose Watercress, Rocket and Spinach Salad in a large salad bowl and add a 225g bag baby spinach. Make the salad dressing by placing 8 tablespoons extra virgin olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon clear honey and some seasoning in a small jug.
    2. When ready to serve, whisk together vigorously, pour over the leaves and toss to combine. Sprinkle some toasted pine nuts over the salad at the table.

    Cook's tips

    If space is limited in your fridge, buy whole heads of salad such as Romaine or Little Gem or bunches of watercress, as they take up less space.
