Steak with tomato & onion relish

Serves: 2
1 half ciabatta
1 tbsp olive oil
250g cherry tomatoes, halved
1 small red onion, finely chopped
3 tsp Dijon mustard
1 tsp honey
2 tbsp balsamic vinegar
½ x 25g pack parsley, chopped
2 x thin cut Aberdeen Angus sirloin steaks, trimmed of excess fat (from the meat counter)
1. Preheat the oven to 200°C, gas mark 6, then cook the ciabatta for 8-10 minutes.
2. Heat the oil in a saucepan and fry the tomatoes and onion for 4-5 minutes, stirring occasionally. Add 1 tsp mustard, plus the honey and vinegar, and cook for 5 minutes until the liquid has reduced and thickened. Stir in the parsley and season.
3. Brush the steaks with a little oil and season. Griddle for 1 minute on each side or according to taste. Halve the ciabatta and spread with remaining mustard, top with the steaks and spoon over the relish. Serve with salad.
