    Lentils with avocado dressing

    Ingredients

    200g pack Waitrose Tenderstem Broccoli Spears, halved
    1 tbsp oil
    1 red pepper, diced
    250g pack Merchant Gourmet Beluga Lentils
    1 small ripe avocado
    1 tbsp hot chilli sauce
    4 tbsp 0% fat natural yogurt  

    Method

    1. Cook the broccoli in boiling water for 3 minutes, then drain. Heat the oil in a large frying pan and cook the broccoli, pepper, lentils and 3 tbsp water for 2-3 minutes.

    2. Meanwhile, place the avocado, chilli sauce and yogurt in a jug and blitz with a stick blender until smooth. Season, then spoon over the broccoli mix to serve.
