Simple warm potato salad recipe | Waitrose

Serves: 10
3 x 500g packs Waitrose Miniature Potatoes
2 stalks celery, finely chopped
5 salad onions, finely chopped
25g pack chives, finely chopped
1 punnet essential Waitrose Salad Cress
For the dressing
1 tbsp wholegrain mustard
1 tbsp cider vinegar
3 tbsp rapeseed oil
1 tsp caster sugar
1. Place the potatoes in a large pan of water, bring to the boil and simmer for 10 minutes until tender. Drain and leave to cool slightly.
2. Meanwhile, for the dressing, whisk together the mustard, vinegar, oil and sugar until well blended. Pour over the warm potatoes, tossing to coat.
3. Scatter over the celery, salad onions and chives and toss gently to combine. Sprinkle with cress to serve.
Serve as a buffet of Boxing Day salads alongside Herbed Tabbouleh With Tahini Yogurt Dressing and Garlic & Chive Flatbreads.
