Beef salsa verde salad

340g pack essential Waitrose British Beef Frying Steak
2 tsp Dijon mustard
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar
3 tbsp chopped herbs (parsley, chives, coriander)
2 tsp capers, chopped
100g pack essential
Waitrose Mixed Salad
1. Spread the steak with mustard on both sides and season with black pepper. Heat a griddle pan and fry the steak for 2-3 minutes on each side (for medium). Allow to rest, then cut into slices.
2. Mix together the oil, vinegar, herbs and capers to make a salsa verde. Toss half into the salad and divide between 2 plates, top with the steak, then spoon over the remaining salsa verde.
