    Citrus prawn couscous

    500ml vegetable stock
    150g Love Life Giant Wholegrain Couscous
    1 tbsp olive oil
    1 red pepper, diced
    1 small courgette, halved lengthways and sliced
    25g pine nuts
    150g pack essential Waitrose Cooked King Prawns
    Zest and juice of 1 orange
    1 tbsp white wine vinegar


    1. Bring the stock to the boil in a saucepan and cook the couscous for 6-8 minutes until tender, then drain.

    2. Meanwhile, heat the oil in a frying pan, and fry the vegetables and nuts for 2-3 minutes. Add the drained couscous and prawns.

    3. Mix together the orange zest and juice with the vinegar, and add to the pan. Cook for 1 minute to heat through. Season to taste.
